“My journey to health has been fascinating and far easier than I ever thought it would be. My daughter Megan was worried about me – I weighed 248 lbs and my blood-sugar levels were sky high. I had excruciating pain in my feet, legs and hips when I walked. I had sleep apnea, and my heart rate at rest was 108 – I was not very healthy. I was in and out of the Doctor’s officeI was pretty much stranded in my house.
I would walk to work which was 5 mins away, it took me 20 to 25 minutes sometimes – I would be in tears from the pain. Megan had been encouraging me for a long time on eating healthy and exercising. One day she called and asked I would be one of her case studies. I was desperate to be healthy, but it seemed so impossible and I was convinced that I could not lose weight. So… my journey began.
Through Megan gently advising and assessing my food diary, I decided to slowly cut out dairy, wheat, sugar, and caffeine from my diet. I thought, I am going for it. Within the first week my blood sugar started to lower to a normal and healthy level. I ate 5 times a day – three meals and two snacks. Megan had been telling me to do this. I started to eat more real foods, no processed food. I ate lots of vegetables and enjoyed trying different kinds. I ate lots of different fruits, which I did not eat much of before because of the high sugar – it does not affect me now. I ate healthy fats and different kinds of meat and fish. I ate healthy grains and I never once felt hungry or craved anything in-between meals and snacks. I also drank lots of water. I began adding all of these healthy choices to my diet and found I slowly began to lose weight, had more energy and less pain, and my blood sugars lowered. I was feeling better and that was so wonderful to me. Megan was always there when I had questions about foods and what their benefits were to the body. I eventually lost 30 lbs.
The result of all these small steps and eating what I want that makes me feel healthy: After 1 1/2 years I am maintaining normal blood sugar levels, my heart rate is healthy and normal, and I have now lost 80lbs. I have never felt so good. I am now planning a trip to Spain to walk a 500 km pilgrimage. I have never lived life so fully and never felt so alive.
